Overnight Chai Steel Cut Oats

I found this recipe on Pinterest the other day and was super excited to try it out.  Coincidentally, I had just bought a package of steel cut oats on Saturday from Superstore.  it was super cheap.. $3.79 maybe?  

there is no cooking involved with this recipe!  my FAVOURITE kind of cooking!


Overnight Chai Steel-Cut Oats
makes 2 servings
adapted from Vegetarian Times 
1 cup steel-cut oats
1 cup almond milk
2 tablespoons ground flax
1/4 teaspoon cardamon
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1 tablespoon maple syrup
Optional toppings–shredded coconut, pecans, almonds, toasted hazelnuts,



i didn't have any ground flax available but i don't think that's a big deal.  also used Agave instead of maple syrup which tasted good, but i think i might go a touch lighter on the cardamon next time.

a little nervous that there was a lot of milk but figured it would get absorbed overnight


these had about 9-10 hours of soaking in the fridge

i think they liked it!

it is quite filling.  i made a serving and a half and i couldn't finish mine and they didn't finish theirs either.  i ended up adding banana to it later in the afternoon which made a huge difference!  i don't know if it's the brand of oats or if they are supposed to be kind of squishy but the banana flavour complemented it so well and added a softer texture to it.  excited to try different variations!  

so simple and it means breakfast is waiting for you!
