NOMS: Gluten Free Double Chocolate Coconut Cookies

this recipe is secret, as in i do not know the recipe.  this recipe was put together by my mother in law who has been playing around with gluten free baking for the past 20 years or so.  this recipe has branched off from her classic gluten-free cookie which has cranberries, chocolate chips, coconut, and i believe walnuts.  they are SO good.  normally, i feel bad eating them when we get some sent home with us, but i figure eating gluten-free is probably good for my body too!

THESE cookies are equally exceptionally delicious.  neighbour cait normally snags a handful whenever we have them around, probably because she knows if she waits to ask, they'll all be gone, HA!  

she has lovingly put together pre-packaged mixes for these yummy delights for the Tsawwassen Movie Nights at the Sublime table as well as at Sublime for purchase.  just as easy as your store-bought cake and or cookie mix, these cookies require 3 house staples:

1 egg
125ml (1/4 cup) butter or margarine
2.5ml (1/2 tsp) vanilla

seriously, i'm pretty sure it couldn't be easier!

Put softened margarine/butter in a mixing bowl.  Add egg and vanilla.  Mix.  Add GLUTEN-FREE MIX and blend well until batter sticks together.  Place dough onto cookie trays lined with parchment paper.  Yields 2-3 dozen depending on size.  Bake 8 minutes for small and 9 minutes for large at 180C or 350F, preferable one tray at a time for even baking.  Each package comes with instructions and ingredients.

white rice flour, brown rice flour, tapioca flour, sorghum flour, white and brown sugar, chocolate chips, shredded coconut, almonds, walnuts, cocoa powder, baking soda, salt, guar gum, xanthan gum

These are definitely a WITH MILK cookie, so if you love sitting around and eating cookies with a tall glass of milk while watching garbage TV, you are going to love these cookies.  HIDE THEM.
