NOMS: Roasted Plums and Peaches & Strawberry-Cucumber-Goat Cheese Sanmmies

Roasted Plums with Olive Oil Thyme and Yogurt


SERVES 4
4 to 6 rip plums, cut in half and pitted
a good drizzle of olive oil
two pinches salt
2 tablespoons granulated sugar
1 teaspoon fresh thyme leaves
nonfat Greek yogurt
granola
Place a rack in the upper third of the oven and preheat oven to 400 degrees F.
In an 8×8-inch square baking pan, place halved plums, cut side up.  Drizzle with olive oil, sprinkle with salt, sugar, and thyme leaves.
Roast for 12 to 15 minutes, or until the plums are cooked through and beginning to bubble.  Remove from the oven and allow to cool to warm or room temperature.
To serve, place desired amount of Greek yogurt in a small bowl.  Add two roasted plums, and top with granola.  Serve immediately.




her recipe originally calls for Greek Yogurt and Granola.  i had neither on hand so it was regular plain yogurt with some quinoa for the crunch!  plain yogurt works great as it balances the sweet and tart from the plums.  great for breakfast, lunch, or dessert!

it really does not get anymore summery than this!  herb goat cheese spread instead of cream cheese topped with slices of local field cucumbers and strawberries.  wish i had come up with this at the start of strawberry season...  try it closed or open faced!  or for a gluten-free version, make rolls out of the cucumber and stuff with goat cheese and strawberries...


ROASTED PEACHES
roasted same style as plums (minus the thyme) with additional sprinkling of cinnamon and a pinch of nutmeg
plain yogurt, coconut milk, icing sugar and minced mint leaves blended
pan-roasted pecans with drop of maple syrup

disgusting, right?
don't try it, you won't like it.
