i'm getting the hang of this granola recipe.
i've made it twice and decided to have the kids help me make this third batch.

i get bulk pecans from Costco and i prefer to chop them myself
rather than spin them in the food processor but you may choose the latter

Makes 4 baking sheets
5 1/2 cups Rolled Oats
1 cup Shredded Coconut
1/3 cup Pumpkin Seeds
1 1/3 cup Slivered Almonds
1 1/3 cup Chopped Pecans
1 Tbsp Cinnamon
150ml Maple Syrup
50ml Coconut Oil
50ml Olive Oil
1 Tbsp Vanilla
1. Preheat oven to 300
2. Mix dry ingredients in large bowl
3. Mix wet ingredients in smaller bowl
4. Toss wet with dry and mix until well incorporated
5. Spread out mixture onto 2 baking sheets lined with parchment paper
6. Bake for 10-15 minutes until golden
PLEASE KEEP WATCH once it hits the 10 minutes mark.
The original recipe suggested 10-15 minutes att 350 and at 10 minutes mine started burning
I assume it's slight differences from oven to oven so be cautious
7. Remove and set to cool on baking sheet or casserole dish
8. Spread remaining mixture onto 2 baking sheets and bake until golden.
feel free to add raisins or dried cranberries to the mix once it is cooled. i add mine to each individual bowl depending on how i'm feeling, though i often prefer to add fresh berries that are all in season at the moment. thinking of doing another batch with pistachios and dried cherries.
